1/2     onion, diced

       1/2     jalapeno, seeded and diced (or green pepper)

           1     can corn, drained

           1     can black beans, drained and rinsed

           1     can fire-roasted tomatoes, chopped

       3/4     cup quinoa

       1/2     teaspoon chili powder

       1/2     teaspoon cumin

           1     cup vegetable broth

Sauté onion and pepper until onions are translucent. Add remaining ingredients and simmer on low for 20 minutes or until quinoa is done.
