6 Cup diced zucchini
1 Cup chopped onion
water to cover zucchini and onions
1 Cup shredded carrots
1 Can cream of chicken soup
8 Ounce sour cream
1/8 Teaspoon garlic powder
4 Cup chopped, cooked chicken
1/2 Cup butter
1 Package chicken-flavored stuffing mix
1 Cup Cheddar cheese


Combine zucchini and onion in medium saucepan. Add water and bring to a boil. Boil for 5 minutes. Drain and let cool for about 5 minutes. Combine carrots, soup, sour cream and garlic powder in large bowl. Add zucchini mixture and chicken. Mix all together. Spread in a 9 x 13-inch buttered baking dish. Melt butter and add bread stuffing and seasoning pack; toss together. Place on zucchini and top with cheese. Bake at 350 degrees for 1 hour.
