2 Cup shredded zucchini
1 Cup chopped carrots
water, to cover
1 Cup sour cream
1 chicken stuffing box
1 Can cream of chicken soup
1 Cup shredded Cheddar cheese


Boil zucchini and carrots in water for about 20 minutes, or until tender. Mix together sour cream, stuffing mix and soup until well blended. Add zucchini and carrots. Spread in a 9 by 9-inch baking dish. Sprinkle with cheese and bake at 350 degrees for 45 minutes.
