1 Tablespoon butter
1 Cup chopped celery
1 large onion, chopped
3 carrots, peeled and sliced
1/4 Cup green or red bell pepper, chopped
2 Clove garlic, minced
1 Can (16 ounce) black-eyed peas, not drained
2 Cup cubed ham, optional
pepper to taste
1 bay leaf, optional
2 Can (16 ounce) butter beans, not drained


In a 3 - 4 quart microwave dish, microwave the butter, celery, onion, carrots and bell pepper until tender. Add the remaining ingredients and cook mixture on high until bubbly hot, but not long enough to burst the beans - approximately 3 minutes. Then microwave on low setting for 30 to 40 minutes. Remove bay leaf and serve.
