4 Tablespoon butter
2 Tablespoon chopped green onion
4 Tablespoon flour
2 Cup milk
1 Cup grated cheese
4 hard cooked eggs, peeled and diced
1 Cup cubed ham
8 Drop Tabasco sauce
2 Tablespoon dried chopped parsley
4 English muffins, split and toasted
paprika or chopped pimento for garnish


In a small saucepan, melt butter. Add green onion and saute until tender. Add flour, stir over heat until lightly browned. Add milk and cook until thickened. Remove from heat and add cheese. Stir until just melted. Fold in eggs, ham, Tabasco and parsley. Place two English muffin halves on each of 4 serving plates. Divide the ham and egg mixture between the four plates and garnish with additional parsley, paprika, chopped pimento or additional hard-cooked egg slices.
