1/4 Cup shortening
1 Cup sugar
1 egg
1 Teaspoon vanilla
1 Cup flour
1/2 Teaspoon baking soda
1/2 Teaspoon baking powder
1/2 Teaspoon salt
1/2 Teaspoon cinnamon
1/2 Teaspoon nutmeg
3 Cup diced apples
1/4 Cup Chopped pecans, optional


Cream shortening and sugar. Add egg and vanilla. Combine dry ingredients and add to creamed mixture. Stir in apples and nuts. Spoon into 8-inch baking dish. Bake at 350 degrees for 45 to 50 minutes or until cake tests done.
