1 Package Refrigerated pizza crust
4 Ounce Mozzarella cheese, part-skim or fat-free shredded
2 Tablespoon tablespoons grated Parmesan cheese
3 plum tomatoes, chopped
1 Can can artichoke hearts in water, drained and chopped
1 small red onion, thinly sliced
2 Teaspoon teaspoons balsamic vinegar
2 cloves garlic, minced
1 Teaspoon salt-free Italian seasoning


Line a baking sheet with foil and lightly coat with vegetable oil spray. Spread pizza crust on foil. Bake crust for 7 minutes at the temperature given on the package. Sprinkle cheeses over crust. In medium bowl, stir together the remaining ingredients, except Italian seasoning. Arrange vegetable mixture over cheese layer, and sprinkle with Italian seasoning. Bake an additional 8-10 minutes or until lightly browned and bubbly.
