2   eggs, beaten

       1/2     cup oil

       1/2     cup brown sugar

           4     cups old fashioned oats

           1     teaspoon cinnamon

           1     tablespoon baking powder

       1/2      teaspoon salt

           1     cup milk

           2     cups chopped apples

           1     cup chopped pecans

Cream eggs, oil and brown sugar. Add oats, cinnamon, baking powder, salt and milk. Mix well. Fold in apples and pecans. Pour into a greased 9 x 13-inch baking dish. Bake at 350 degrees for 25-30 minutes. Serve with warm milk or yogurt – or top with granola. You can make a day ahead and refrigerate.
