3 1/2    cups flour

          3    cups peeled and diced apples

          2    cups sugar

          1    teaspoon salt

          1    teaspoon baking soda

          1    teaspoon cinnamon

    1 1/4    cups vegetable oil

          2    eggs, beaten lightly

       1/2    cup chopped pecans

          1    teaspoon vanilla

In a large bowl, combine the flour, apples, sugar, salt, baking soda and cinnamon. Stir in the oil, eggs, pecans and vanilla. Fill sprayed muffin cups to the top. Bake at 350 degrees for 30 minutes. Cool on a wire rack for 5 minutes before removing from the pan.
