1/3 Cup applesauce
2 Teaspoon cinnamon
1 Cup dried cranberries
2 Tablespoon butter
1/2 Cup milk
1/4 Cup water
3 Cup flour
3 Tablespoon sugar
1 yeast packet
1 Tablespoon grated orange rind
1 Teaspoon salt
1 egg
1/2 Cup mashed potatoes
1/2 Cup powdered sugar
1 Tablespoon orange juice


Combine applesauce, cinnamon and cranberries and set aside to soften the cranberries. Heat butter, milk and water until warm (120 degrees) and pour into a large bowl. Then add 1 cup of flour, sugar, yeast, orange rind, salt, egg and mashed potatoes and set aside for 5-10 minutes. Add remaining flour and knead for 5 to 8 minutes. Turn into an oiled bowl and let rise for an hour or until double in size. Punch down and roll out on a lightly floured surface into a 12 by 15-inch rectangle. Spread applesauce cranberry mixture evenly onto dough. Beginning with the long side of the dough, roll into a log and pinch ends to seal. Form into a ring overlapping sealed ends. Place seam side down on a greased baking sheet. Using scissors, cut ring from the outside to within 1 inch of the center. Make 12 cuts two inches apart. Twist each section 3/4 of a turn so cut sides face down forming a pinwheel. Cover and let rise for 30-50 minutes. May brush with an egg wash. Bake at 375 degrees for 30-40 minutes or until golden brown. Cool and add glaze of powdered sugar mixed with the orange juice.
