1 Cup raw rice
1 3-ounce package lemon gelatin
1 1/2 Cup boiling water
1 8-ounce can crushed pineapple
1 15-ounce can fruit cocktail
1 11-ounce can mandarin oranges
1 Cup each fresh fruit, as desired
whipped topping


Cook rice according to package directions until tender. Set aside to cool. Dissolve gelatin in boiling water. add the rice and entire can of crushed pineapple. Drain the fruit cocktail and oranges. Mix and add to rice mixture and let set. When ready to serve, use desired amount of the jelled mixture and fresh fruits of choice; moisten with the whipped topping.
