12 large tomatoes, peeled and quartered

1/2 cup salt

3 green peppers, diced

3 medium onions, chopped

8 ribs celery, sliced

1 cup vinegar

1 1/2 cups sugar

2 teaspoons dry mustard

Mix tomatoes and salt and place in colander to drain for 1 hour. Mix with peppers, onions and celery. In a saucepan, bring the vinegar, sugar and mustard to a boil, cook for 3 to 5 minutes, cool and pour over the tomato mixture. Cover and refrigerate.
